Widow Jane 10 Yr Straight Bourbon Whiskey

As great whiskey distillers throughout the world — from Kentucky to Scotland — have long known, it takes sweet water from tough rock to make great whiskey. And, that’s what Widow Jane Whiskey is all about.

This 10 year whiskey is aged to perfection. It drinks like a 20 year bourbon with its deep cherry notes and light tannic finish.

Aroma: Butter, Cream, Toffee
Front: Cherry Wood, Olive Oil
Mid: Orange
Finish: Burnt Orange and Spice
After Glow: Light tannic fuzz

Whiskey Distilled from a Rye Mash -American Oak Aged


When rye comes off the still it is sweet, grassy, and floral. A traditional “spicy” characteristic all come from the barrel. With this whiskey, our goal was to lightly oak the rye distillate in our 7-year bourbon barrels with added fresh oak and applewood staves.  

This is a light, tropical “summer” rye and makes for some great cocktails. A good bitter, or a splash of vermouth or ginger beer goes a long way.   

Aroma: Cardamom, Rum Raisin, Pineapple, Orange Peel
Front: Vanilla, Clover, Orange Peel, Maple, Brown Sugar
Mid: Smoked Maple, Almond, Apricot
Finish: White pepper, Basswood

Widow Jane 12 Year 99 Proof Straight Bourbon Whiskey

While we love cask strength bourbon, the pure hard-yet-sweet limestone water of the Widow Jane Mine does so much for our profile that we can't image not having it in our bottles. The higher ABC dials up the richness and depth of our bourbon for these special releases.

Every single barrel is unique. While tasting look for greater complexity, round spice & a creamy finish. 49.5% ALC/VOL - 99 Proof - Aged 12 Years in American Oak

Widow Jane Dregs

Our whiskeys are bottled by racking off single  barrels. We stop short of the last inch when emptying as there is too much charcoal and sediment. These whiskey dregs are collected into a glass demijane.

When we received our new bottling line we decided to test on the Dregs demijane of Widow Jane barrels 1-100.  Our beautiful new machine proudly spit out the bottles with the labels upside down...We laughed and chalked it up to technological progress and set a new tradition for us. Every 100 barrels the dregs are bottled upside down in a limited release of up to only 100 bottles. 

Our founder said we make such incredibly smooth whiskey, sometimes he feels nostalgic for a hot whiskey he remembers in his youth. When you are in the mood for something bolder this is the bottle to go for.

Baby Jane is our highest end bourbon, a labor of love for 5 years of creating the non-gmo corn that is responsible for its name. Through open-air pollination, the Bloody Butcher and Wapsie Valley corns hybridized to create the Baby Jane's sunburst orange color, taking its savory roundness from its Bloody Butcher Corn and sweet subtlety from the Wapsie Valley Corn to create a taste taht won Best in Class in Whiskeys of the World's Best Bourbon under 2 years old. 

Nose:  White Tea, Red Currant, Kettle Corn, Toffee
Taste: Cherry, Cornbread, Gingersnap, Dulce de Leche
Finish: Rum Rasin, Apricot, Allspice

Bloody Butcher High Rye Bourbon Whiskey

Organic, farm-to-bottle, using no genetically modified corns, grains, yeasts, or enzymes. Distilled in Red Hook, Brooklyn.

Mash Bill 58% Organic Dark Red Endosperm Corn, 15% Heirloom Barley, 27% Rye. 

Nose: Cacao, Sandalwood, Cedar, Leather
Taste: Sharp Apricot, Toasted Marshmallows, Cardamom, Candied Apples
Finish: Salted Peanuts, Grilled Honeyed Peaches, Dates


Bloody Butcher Bourbon Whiskey

Mash Bill 85% Organic Dark Red Endosperm Corn, 15% Heirloom Barley.

Nose: Sweet Oak, Graham Cracker
Taste: Vanilla, Dry Up Front, Bright, Allspice

Wapsie Valley Bourbon Whiskey

Organic, farm-to-bottle, using no genetically modified corns, grains, yeasts, or enzymes. Distilled in Red Hook, Brooklyn.

Mash Bill 60% Organic Mixed yellow and Red Endosperm Corn, 15% Heirloom Barley, 25% Rye.

Nose: Almond, Maple, Chocolate
Taste: Pralines, Orange, Bergamot
Finish: Honey, Nutmeg


CHOCOLATE MALT Bourbon Whiskey

The Chocolate Malt Bourbon uses a chocolate malted barley to achieve its dark chocolate and mole flavors. This malted grain is rounded out by the sweetness of the Wapsie Valley Corn and a touch of Rye. 

Nose: Carob, Dark Chocolate, Burnt Caramel
Taste: Smoked Peppers, Mole, Ground Almond
Finish: Dry, Toasted Oak

 


HOPI BLUE Bourbon Whiskey

This Hopi Blue Bourbon is for someone looking for a flavor that is completely different. This bourbon sticks out as it embraces a the bright Hopi Blue corn varietal.

NOSE: Toffee, Brown Sugar, Clove
TASTE: Earthy, Farro, Polenta, Popcorn
FINISH: Tart Cherry, Buttermilk

Cacao Prieto White Rum

Cacao Prieto rum based products are crafted from Organic Cane Sugar. This White Rum is not your typical rum agricole: Made from 100% Organic Dominican Sugar Cane. 

We ferment with a wine yeast and distilled to a slightly higher purity than usual. The effect is super clean and light with wonderful aromatic notes of honeysuckle and banana.

Deep notes of incredibly pure cacao absolutely jump out of the glass. The chocolate flavors on the palate are accentuated by hints of coffee and the rum base comes bursting through keeping everything very lively and light. For the serious drinker and chocolate lover.

Crafted from Organic Cane Sugar and Organic Dominican Cacao. As with artisanal chocolate making, every Organic Cacao bean is hand roasted, cracked and winnowed. Distillation is followed by a period of aging in oak. The resulting products are truly unique, accurately capturing the aroma and flavor of Organic dark roasted chocolate in a bottle for the first time. At 40% ABV they can be utilized as a base spirit in cocktails or enjoyed neat, on the rocks or chilled.

Don Esteban Cacao Rum Liqueur

Cacao Prieto rum based products are crafted from Organic Cane Sugar and Organic Dominican Cacao. As with artisanal chocolate making, every Organic Cacao bean is hand roasted, cracked and winnowed. Distillation is followed by a period of aging in oak. The resulting products are truly unique, accurately capturing the aroma and flavor of Organic dark roasted chocolate in a bottle for the first time. At 40% ABV they can be utilized as a base spirit in cocktails or enjoyed neat, on the rocks or chilled.

Aged in once used Widow Jane rye barrels, Cacao Prieto’s Rum is distilled from the finest organic sugar cane, first boil molasses, and pure limestone mineral water from the Widow Jane Mine located in Rosendale, New York.  Uncommonly smooth and complex.
